For the holiday weekend, my family and a few of their friends went to Mammoth Caves, KY, the largest cave system in the world.  We did a 4-hour tour of the caves and saw some amazing sites and learned some things about the formation and destruction of caves.  My calves are still a little sore, but the worst part was the 6-hour drive/bounce down and back in a 15-passenger van.  If you ever go down there, I would recommend www.hickorycabins.com - a nice place to stay very close to the park.  You can cross the Green River on the free ferry and be at the Visitor Center in about 10 minutes.  If you're into roughing it, there is a campground on site where you can pitch a tent or park your RV.  If you like nature, this is a great experience.  I would definitely recommend making online reservations ahead of time.  There were people who drove 7 hours to take the same tour we did, but the tour was already full when they got there.  If you're looking for something to do with the family, I would recommend this experience.

We'd love to hear what you did over the holiday weekend as well.  Chime in!
